6 boned thick pork chops
2 tbsp. butter
1/2 c chicken stock

Stuffing
1 c bread crumbs
1/2 c chopped celery
1/4 c chopped onion
1/2 tsp dried sage
1/4 c chicken stock

Directions:
Directions:
Cut a large pocket into each chop. Mix stuffing ingredients slowly adding 1/4 c stock until stuffing is just moist. Fill the pockets with stuffing and skewer them shut. Quickly brown chops in skillet with 2 tbsp. butter. Add 1/2 c chicken stock and turn heat to low, cover and cook until tender (about one hour). Serve plain or with pan gravy.
