Creme Brulee Recipe

6 Egg Yolks
1/4 Cup Sugar
2 1/2 Cups Heavy Cream
Pinch of Salt
1 tsp Vanilla Extract
4 Tbsp granulated Sugar (caster sugar if available)

Directions:
Directions:
1. Preheat oven to 300º
2. Put water on to boil
3. Beat Egg Yolks and Vanilla Extract until smooth - set aside.
4. In saucepan, place cream, sugar and salt. Heat over low to medium heat, stirring occasionally until steam starts to rise, (about 5 minutes).
5. Temper egg mixture by adding a little (a couple of tablespoons) of the cream mixture while stirring. Then slowly stir cream mixture into egg mixture until well combined.

6. Cook in a bain-marie, (hot water bath). Place a damp towel in bottom of baking pan and place filled ramekins on the towel and place pan on oven rack. Pour hot water into pan halfway up the sides of the ramekins.

7. Fill ramekins with the Creme Brulee mixture. Cook for 30 minutes then remove and cool. Refrigerate for 2 hours. 8. Just before serving, sprinkle sugar over top and torch to caramelize sugar.
