1 C Heavy Cream
1/4 C Butter
1 Tbsp Lemon Juice
3/4 C Parmesan Cheese, grated
3 Egg Yolks
1 tsp garlic powder

Directions:
Directions:
1. In heavy saucepan melt butter, add heavy cream stirring until well blended; add lemon juice and garlic powder.
2. Temper egg yolks then add to mixture.
3. Slowly stir in cheese and continue stirring until well blended - take care not to overcook.

If your sauce should separate, stir in a little more cream and it will come back together.

Serve over Angel Hair pasta with shrimp or chicken; or add to other appropriate dishes. Sauce may be refrigerated for up to three days; be sure to reheat slowly, stirring constantly.

Make it Cajun by adding 4 Tbsp Cajun seasoning, 1 Tbsp sugar, 1 tsp oregano. For a little heat add about 1/4 to 1/2 tsp Crab Boil concentrate.

Note: To temper egg yolks, beat them in a small container then add very small amounts of the hot mixture wile stirring then add to the mixture.
