1 lb calf liver
2 tbsp. butter
2 tbsp. salad oil
1/2 c flour
2 medium sliced onion
1/2 c white wine

Directions:
Directions:
Slice liver 3/4" thick. Season with salt and pepper and coat with flour. In skillet heat butter and oil. Add onions and sauté about 3 min. Remove onions. Add liver and fry over high heat about 3 min each side. Replace onions and add wine. Turn heat up very hot and cook 1 min. Remove from heat and serve immediately.
