3 lb rolled boneless pork roast
1 c white wine
3 tbsp. Dijon mustard
1/2 tsp pepper
1 c cream
3 tbsp. chopped capers

Directions:
Directions:
Rub pepper into roast. Place fat side up on a rack in a roasting pan. Cook in 375ºF oven for 45 to 55 min until done. Remove roast and keep warm on a serving platter. Skim fat from the roasting pan. Deglaze with white wine over high heat (about 3 min). Add mustard, cream, capers and any juice from pork roast. Cook until reduced by almost half. Serve over sliced pork roast.
