1 (2 lb) cut up chicken
1/4 c peanut oil
1/4 c water
1/2 c water
1/2 c chopped onion
1 clove crushed garlic
2 c uncooked rice
1/4 tsp saffron
4 c chicken broth
1 lb cooked shrimp
1/2 lb Italian sausage
15 clams
1 c thawed frozen peas

Heat oil in large skillet. Add cut up chicken and brown all over. Add water, cover and simmer 30 min. Remove chicken and set aside. In the same skillet add onion and garlic and sauté until clear. Add rice and saffron and cook over low heat until rice is light brown. Add chicken broth, bring to a boil, cover, reduce heat and simmer about 17 min. Toss in peas. Arrange rice, chicken, shrimp, sausage and clams in layers of a large oiled casserole dish. Bake at 350ºF for 15 to 20 min. If using clams bake until they open.
