4 lb beef rump roast
1/4 lb deli ham
5 strips bacon
3 cloves chopped garlic
2 stalks chopped celery
2 thinly sliced carrots
1 c white wine
1 c red wine
1 tbsp. fresh rosemary
1/4 tsp dried basil
1/4 tsp dried oregano
salt
pepper

Directions:
Directions:
Line a large Dutch oven with the strips of bacon. Add the roast and brown on all sides over high heat. Add the remaining ingredients, cover tightly and cook over low heat for 3 1/2 hours or until tender. Turn occasionally. Serve roast with the pot liquid and buttered pasta.
