1/2 c. rice
1 can 16 oz. sauerkraut
1 12 oz. can corned beef
1/4 c. chopped onion
3 eggs (2 for croquettes 1 to roll in before crumbs)
1 c. Swiss cheese shredded
1/4 tsp. salt
1/4 tsp. pepper
2 T. water
1 1/2 c. fine dry bread crumbs

Sauce
1 c. mayonnaise
1/3 c. milk
1/4 c. prepared mustard
4 tsp. lemon juice

oil for frying

Directions:
Directions:
Cook rice. Drain sauerkraut very well (press). Chop sauerkraut and corned beef very fine. Add onion, 2 eggs, rice, cheese, salt and pepper. Mix well. Make 18 balls. Mix 1 egg and water, beat slightly. Roll each ball once in crumb then egg mixture then again in crumbs. Let dry 10 minutes. Fry in hot fat 5 to 7 minutes turning once or Bake at 450º for 10 minutes then turn and bake 10 more minutes. Make sauce.
