1 crown roast lamb
1 recipe pilaf
3 cloves crushed garlic

Have a butcher cut and tie a crown roast for you allowing 2 ribs per person. Preheat oven to 450ºF. Rub the garlic all over the lamb and cover the ends of the bones with aluminum foil, place on roasting pan and place in oven. Immediately reduce the heat to 350ºF and bake at 20 min per lb or until internal temperature is 160ºF. During the last hour place the pilaf in the center of the crown roast. Pilaf may need covering with foil to prevent over browning.
