2 cups mashed potatoes
7 T. yeast
1 cup warm water
1 T. sugar
1 quart scalded milk (6 to 7 minutes in microwave)
3 T. salt
4 eggs-beaten
1 cup sugar
8 T. shortening
12 cups flour

Directions:
Directions:
Proof yeast, warm water and 1 T. sugar until foamy-set aside. Cream sugar, shortening, salt and potatoes. Blend well and then add in yeast mixture, when milk is warm, not hot blend it in add remaining ingredients, blending in flour one cup at a time. Knead until smooth. Put dough into a greased bowl, cover and let raise until double. Punch down and then roll out to about 1/2 in thickness. Cut out donuts and let raise. Fry in hot oil until golden brown. Dip in a glaze made of powdered sugar, hot water and vanilla or just dip in sugar.
