2 lb lean cubed pork
1/2 c water
2 cloves garlic
1 chopped onion
1 c canned whole tomatillos
1 tsp coriander seeds
1 small can chopped milk green chilies
tbsp. cilantro
1 recipe salsa fresca

Directions:
Directions:
Cook pork and garlic in 1/2 c water until all the water is absorbed. Discard garlic and let the pork brown in its fat for a few min. Add the onion and sauté until translucent. Add the tomatillos and the chilies and cover and simmer for 30 to 40 min until pork is tender. Just before serving add the chopped cilantro, salt and pepper to taste and stir well. Serve with Salsa Fresca.
