2-8 oz. cans tomato sauce
1/2 cup apple cider vinegar
1 cup brown sugar
1 large can of pineapple tidbits
2 to 3 Tbs. cornstarch
1 green pepper chopped
2 carrots sliced
1 stalks of celery sliced

Directions:
Directions:
Combine tomato sauce, vinegar, brown sugar and juice from the can of pineapple in a medium saucepan. Stir well and cook over low heat until boiling. Mix the cornstarch with a 1/4 cup of water in a small cup and stir until combined and fluid then pour into mixture in pan. Stir constantly until mixture thickens-set aside.

Steam vegetables in a steamer or place them in a microwaveable bowl, add about a quarter cup of water, cover and cook on high in microwave for six minutes. Be very careful when removing cover as not to get burned by steam. If vegetables are tender drain fluid and add to the tomato sauce. If they are not tender return to the microwave and cook in one minute increments under tender. Stir in veggies and pineapple and serve warm over cooked rice. Can add cooked chicken to the sauce when adding veggies.
