8 tsp soy sauce
2 tsp hot pepper sauce
1 tsp olive oil
6 (4 oz) thin-cut boneless pork loin chops
2 large garlic cloves, crushed
3 oz unsalted toasted cashews (scant 3/4 cup)
1 tbsp fresh lime juice
lime wedges, for serving

Heat broiler and line broiler pan with foil.
In a large bowl, combine 4 tsp of the soy sauce, the hot pepper sauce and the oil.
Cut strips of the pork into 1/4 inch thickness.
Add the pork to the soy sauce mixture and let marinate while you make the cashew sauce.
In a mini food processor add the garlic, the remaining 4 tsp soy sauce, the cashews, lime juice, and 1/2 cup water. Process to a smooth puree.
Thread the pork strips onto 24 (6-8 inch) wooden or metal skewers and place on the broiler pan (or I just lay the strips on the broiler pan and skip the skewing part).
Broil 6 inches from the heat, without turning, for 4 minutes, or until the pork is cooked through but still juicy.
Divide the pork among 4 plates and serve with individual bowls of the cashew sauce and lime wedges for squeezing.

These pork skewers are a variation on the traditional Southeast Asian satay-grilled meat, poultry, or seafood that is dipped into a spicy peanut sauce. Here, more flavorful cashews are the base for the sauce instead of peanuts.
