I bag uncooked, deshelled, deveined shrimp (remove tails after they thaw)
Marinade ingredients:
2 cloved minced garlic
1 tsp. cumin
1 tsp. chili powder
1/2 tsp. kosher salt
1/2 tsp. cayenne pepper
2 Tbs. olive oil
8 corn tortillas

Marinade:
In a large ziplock bag combine all marinade ingredients.
Add thawed shrimp and marinade in fridge for at least 20 minutes.
Cook shrimp in small frying pan over medium heat, stir constantly.
Shrimp cook quickly and are done when they are firm and are no longer translucent.
Cook corn tortilla in additional cooking oil. Drain each tortilla and fill with shrimp.
Serve with shredded lettuce, avacado, fiesta ranch dressing (ranch dressing with salsa). Serve with refried black beans and Spanish rice.
