Optional: 1/2 red cabbage sliced with 1/2 t. salt and microwave 15-20 min and drain
1 lg onion chopped red or yellow
1-2 carrots chopped
Olive oil
12 oz beer Pilsner is nice
3/4 c. spiced cider
1 t. chicken concentrate
2 lb fresh sausage (I like bratwurst)
Herbs: thyme, rosemary, bay leaf, 1/4 t. allspice whole, few juniper berries
1-2 lbs Saurkraut Boars Head drained
1 apple peeled and chopped
At end: 2 T. cider vinegar and 1 T. brown sugar
Saute apples 4 apples peeled and sliced thin, 2 T. butter, 1 T brown sugar

Directions:
Prick sausages and brown on all sides and set aside. Saute onion and carrots until tender.
Add salt and pepper, and add herbs (I put in an infuser), sugar, saurkraut, cabbage if using, apple. Mix.
Add beer and cider and chicken concentrate.
Cook high 4-5 hours or low 9 hours.
Add cider vinegar and brown sugar.
Serve with mustards and saute apples
Saute apples in butter and brown sugar 5-10 min.
