TEXAS SWEET ONION PIE Recipe

Ingredients: 6 large sweet or Vidalia Onions (approx. 2-1/2 cups, chopped) 1/3 cup flour 1 pie crust 1 stick butter 2 eggs 3/4 cup Parmesan Cheese

Directions: |
Directions:Melt the 1/2 cup butter slowly in a large skillet. Add the chopped onions and sauté until they appear clear. Remove from heat immediately. Pour onion and butter mixture into the mixing bowl. Allow to cool completely (approximately, 30-40 minutes). Put pie crust in oven on middle rack and brown it slightly, about 10 minutes at 300 degrees.
With onions completely cooled, add the 2 eggs and blend well. Add the cheese and flour. Remove pie crust when lightly browned and pour onion mixture into pie shell. Bake at 350 degrees for 40-45 minutes.
Optional: After 30 minutes bake time, you can sprinkle additional Parmesan cheese atop pie for cheesier taste. Allow pie to cool a bit before serving as it helps pie firm up more and make s more consistent slices. |

Notes: This recipe was given to me by my friend Mary Sipley. She got it from one of her Texas childhood gal pals. For a spicier effect, Mary adds Tabasco to her mixture, but not me as I don't have a death wish! You can try that at your own risk.
