10 ounces Dry Macaroni
3/4 cup to 1 cup mayonnaise (I use Duke's but apparently they are deprived in California where Eve lived - she said they didn't have Duke's. Her recipe called for Kraft.)
1 tsp. Dijon Mustard
1/2 cup chopped celery
1/4 cup sweet pickle relish
1/4 cup dill pickle relish
1/4 cup chopped sweet bell pepper, either, green, orange, red, or yellow
1/4 cup onion
1/2 cup chopped bean pods (Chinese variety)
1/2 tspn. salt
1/4 tspn. pepper

Directions:

Cook macaroni according to package directions.
Drain in colander and run cold water over it to cool. Allow to drain thoroughly. Mix all the other ingredients together in a large mixing bowl.
Add the drained macaroni and mix well adding more mayonnaise if needed. Cover and chill for several hours. Stir before serving.

My Aunt Eve Johnsen, the sister to whom my mom was closest, sent me this recipe from her home in California after I married. Mother used and loved it. She and her sisters were always trading recipes, but she especially looked forward to Christmas cards from her family because often there would be a clipped recipe enclosed. For variety in this macaroni salad you may add broccoli or water chestnuts chopped. Almost any crunchy veggie works well in it.
