Ingredients: 10 ounces Dry Macaroni 3/4 cup to 1 cup mayonnaise (I use Duke's but apparently they are deprived in California where Eve lived - she said they didn't have Duke's. Her recipe called for Kraft.) 1 tsp. Dijon Mustard 1/2 cup chopped celery 1/4 cup sweet pickle relish 1/4 cup dill pickle relish 1/4 cup chopped sweet bell pepper, either, green, orange, red, or yellow 1/4 cup onion 1/2 cup chopped bean pods (Chinese variety) 1/2 tspn. salt 1/4 tspn. pepper

Directions:Cook macaroni according to package directions. Drain in colander and run cold water over it to cool. Allow to drain thoroughly. Mix all the other ingredients together in a large mixing bowl. Add the drained macaroni and mix well adding more mayonnaise if needed. Cover and chill for several hours. Stir before serving. |

Notes: My Aunt Eve Johnsen, the sister to whom my mom was closest, sent me this recipe from her home in California after I married. Mother used and loved it. She and her sisters were always trading recipes, but she especially looked forward to Christmas cards from her family because often there would be a clipped recipe enclosed. For variety in this macaroni salad you may add broccoli or water chestnuts chopped. Almost any crunchy veggie works well in it.
