1 (4 lb) cut up chicken
1/2 lemon
2 tsp ground ginger
1/3 c peanut oil
1/4 c honey
1 pinch salt

Directions:
Directions:
Rub the chicken pieces with lemon. Sprinkle with 1/2 of the ginger and salt. Combine oil, honey and the remaining ginger. Brush chicken with honey mixture. Roast in oven (350ºf) 1 /12 to 2 hours, basting occasionally with the honey mixture.
