1 1/4 cup all-purpose flour
1/2 cup sugar
4 tbsp. butter, softened
1 tsp. baking powder
1 tsp. grated lemon peel
1/4 tsp. salt
2 eggs
3/4 cup mincemeat
1/2 cup flaked coconut

Directions:
Directions:
1. In large bowl with mixer at medium speed, beat first 6 ingredients and 1 egg until blended.
2. In medium bowl, mix mincemeat and coconut. In another cup, beat remaining egg with fork.
3. Preheat oven to 375º. Grease large coolie sheet.
4. On floured surface, roll 1/2 of dough 1/8 inch thick.
5. With 3 inch round flute cookie cutter, cut as many circles as possible. Brush edges with egg.
6. Fill with mincemeat, top with second dough circle. Brush top with egg.
7. Prick tops with fork and bake 12-15 minutes until lightly browned.
