2 chicken breasts, split, skinned and de-boned
4 thin slices ham
4 thin slices Swiss cheese
1 pkg (10 oz) frozen chopped spinach; thawed and drained
1 can cream of chicken soup
1/3 cup water
1/4 cup sliced green onions
1/8 tsp dried thyme

Directions:
Directions:
Pound chicken to 1/4 inch thickness.
Place a ham slice, cheese slice and 1/4 of spinach on each chicken breast.
Roll, secure with toothpick.
Place chicken, seam side down, in 12 x 8 baking dish.
Microwave on high 5 minutes
In bowl stir soup, water, onions and thyme.
Pour over chicken.
Cover and microwave on high 10 minutes or until chicken is fork tender.

Let stand covered x 5 minutes.

Chicken Florentine is American and you'll never find it in Italy. It is interesting to note though that, historically speaking, the origins of "Florentine" preparation trace their roots back to Florence-born Catherine de'Medici and her legendary merry band of French cooks. What made a dish "Florentine" was not the spinach, but the white sauce that her French cooks made: the besciamella, or béchamel.
