21/2 lbs Ground beef
2 (12oz boxes of jumbo pasta shells)
1 (26 oz) jar Of spaghetti sauce
1 (8 oz) box frozen spinach, Optional
2 c. ricotta cheese
1 lb shredded mozzarella cheese
1/2 c grated Parmesan cheese
2 garlic cloves minced
1 small yellow onion, finely chopped
5 TBSP. Italian seasonings
4 eggs slightly beaten
1/3 c. Milk

1. Brown ground beef and drain, Return to pan. Saute onions and Garlic in pan with cooked meat for approx. 3 minutes. Set aside.
2. Boil salted water to cook the paste shells according to package al dente style. strain and set aside.
3. In a large bowl, mix ricotta, Parmesan cheese, & 2/3 package of shredded mozzarella. Add Italian seasoning, garlic, pepper, eggs and milk, mix thoroughly. Mix in Meat and Spinach.
4. In a large baking dish pour enough sauce to cover the bottom of dish lightly, Fill each shell with large rounded tablespoons of meat and cheese mixture, and place in dish. Be sure to place the shells closely together so they will not burn when baking.
5. If There are to many shells for 1 dish, make a 2nd dish and store tightly covered in freezer until later use.
6. Pour remaining sauce evenly over all of the shells. Sprinkle with remaining mozzarella cheese. Cover tightly with aluminum foil, and bake at 375º for 35 / 45 minutes. Take foil off dish, and bake additional 10 minutes.
