1 T. dry yeast
1/8 c. warm water
1-1/3 c. warm water
1/3 c. brown sugar
5 c. flour
butter
coarse salt

*hot soda water - 2 tsp. baking soda per 1 c. hot water

Directions:
Directions:
Dissolve yeast in 1/8 cup warm water, add brown sugar and additional warm water. Let sit for 10 minutes. This mixture should be foamy looking. Add flour one cup at a time (about 4 cups) until dough comes together. Turn out onto floured surface and knead until smooth, adding additional flour as needed.

Oil surface and place in a covered bowl to rise; about one hour. divide and shape pretzels as desired. Dip into hot soda water and place on buttered baking sheet. Brush with additional butter. Sprinkle with coarse salt. Bake at 475º until golden brown, @8-10 minutes. Remove from oven and brush again with melted butter.
