1 1/2 cups millet
2 tbsp. oil
1 large onion, peeled and chopped
2 carrots, scraped and diced
1 garlic clove, crushed
1 walnut-sized piece of fresh ginger, grated
1 inch piece cinnamon stick
3 cups water
salt and freshly ground black pepper
1/3 cup raisins
1/2 cup almonds, slivered

Directions:
Directions:
Roast millet by putting it into large saucepan and stirring over moderate heat for 3-4 minutes. Put on plate.
Heat oil and sauté onion for 5 minutes, then add carrots, garlic, ginger and cinnamon. Cook for 5 more minutes.
Add toasted millet to onion and carrot mixture. Pour in water and season to taste with salt and pepper.
Bring to boil, then cover, turn down heat and cook gently for 15-20 minutes, until all water has been absorbed.
Add raisins and slivered almonds. Mix in with fork.

Millet cooks quickly and makes a good pilaf that is pleasant change from rice. It is the richest grain in both protein and iron.
