1 very ripe Banana
1 C old-fashioned Oats
1/2 C water or non-dairy milk
2 Tbsp. ground flaxseeds or Chia seeds
1 tsp. Vanilla
Zest of 1/2 Orange, or more, or 1/2 to 1 tsp. orange extract

Directions:
1. Preheat waffle iron.
2. Place banana in a food processor and blend until smooth. Add in oats, water, seeds, vanilla, and orange zest-blend. Batter will be thick.
3. Place about a 1/3 C of batter into iron. Don't peek for at least 8 minutes. if waffles stick, use a chop stick to remove them, they are still good even if they are in pieces.
4. Serve with berries or applesauce.
