5 slices lean bacon, chopped fine
1/2 cup cider vinegar
1 tsp. sugar (use more if you like sweeter)
1 tsp. Dijon mustard
1 tbsp. olive oil
Salt & pepper

1 pound of spinach, course stems discarded and leaves washed and dried well.

Directions:
Directions:
Heat mixture to a low boil and pour on spinach while very hot.
You can add walnuts, mandarin orange slices and crumbled blue cheese if you like.
1 pound of spinach wilts down to 2 to 3 decent size servings.
