1 cut-up fryer chicken
2 c sifted flour
3 whipped eggs
3 c crushed saltine crackers
2 tbsp. poultry seasoning
1 tbsp. salt
2 tbsp. pepper
1 tbsp. white pepper
1/3 c white Worcestershire sauce
1 c vegetable oil

Directions:
Directions:
Combine flour, poultry seasoning, salt and peppers in a bowl. Whip eggs in another bowl. Crush crackers in a third bowl. Coat each piece of chicken in flour, then egg, cracker crumbs and again in flour. Pour oil into frying pan (two may be used for 6 or more servings); heat to about 350ºF. Add chicken and cover and fry for 15 min. Turn chicken and pour white Worcestershire over chicken, cover and cook another 10-15 min or until chicken is cooked through.
