12 ounces of Pasta (I use Ancient Harvest, a Lentil & Quinoa Pasta)
1 8.5 oz jar sun-dried tomatoes packed in olive oil
2 Cloves Garlic 1 C Packed Fresh Basil Leaves
1/2 C freshly Grated Parmesan

Directions:
Directions:
1. Cook pasta according to directions, drain, reserving one cup of the liquid after cooking.
2. In blender, blend the tomatoes in their oil, garlic, basil, salt, and pepper to taste, blend until tomatoes are finely copped.
3. Transfer tomato mixture to a bowl, stir in the parmesan. Add pasta to mixture and toss to coat, adding enough of the reserved water to moisten.
4. Season and serve
