4 poached eggs
2 toasted English Muffins
4 slices cheddar cheese
3/4 c mayonnaise
3/4 c sour cream
1 tbsp. mustard
1 tbsp. lemon juice
1/8 tsp cayenne
1/2 c cooked squeezed dry spinach

Directions:
Directions:
Blend last 6 ingredients in a blender or processor. Gently heat resultant sauce in sauce pan. Place cheese slices on toast and broil them until cheese melts. To serve place poached eggs on the muffins and top with sauce.
