12 boneless pork chops
2 c sifted flour
1 tbsp. salt
2 tbsp. pepper
2 tbsp. poultry seasoning
1 tbsp. oregano
1 tbsp. white pepper
3 beaten eggs
3 c crushed saltine crackers
1 c vegetable oil

Directions:
Directions:
Combine flour and all dry spices. Lightly pound pork chops. Completely flour each chop and dip into egg then cracker crumbs and then reflour. In sauté pan heat oil until hot (2 pans may be used for 6 or more servings). Fry chops for 10-15 min per side until cooked through. Keep flame medium to low to avoid burning chops.
