1 Medium head of Cauliflower
4 Eggs
2 C Shredded Mozzarella (or Daiya for vegan)
1 Tbs. dried Oregano
4 Cloves Garlic, minced
1/2 tsp. Kosher Salt
1/4 tsp. Ground Pepper
1 additional C shredded Mozzarella cheese for topping
Serve with Marinara

1. Preheat oven to 425º
2. Line a sheet pan with parchment paper and brush with olive oil.
3. Cut Cauliflower into florets. Place in food processor. Pulse until cauliflower is chopped into small pieces that are about the same size as a grain of rice.
4. Place 4 C of riced cauliflower in a large microwavable bowl, and cover with plastic wrap. Microwave for 10 minutes, or until cauliflower is tender.
Let cauliflower cool. Add eggs, 2 C of mozzarella, oregano, garlic, salt and pepper and stir to combine.
6. Divide the mixture in half and shape into 2 circles on prepared baking sheet.
7. Bake for 25 minutes, then remove it from the oven and top with remaining mozzarella and bake for another 5 minutes.
8. Serve with marinara sauce for dipping!
