1 clove garlic minced
1 tbsp. butter
1 c cooked cubed chicken
1 1/2 c water
1 1/2 c minute rice
1 c diced tomatoes
1/2 c sour cream
1/2 c each chopped fresh basil and parsley
1/4 c toasted pine nuts
1 1/2 tsp salt
1/4 tsp pepper

Directions:
Stove: Saute garlic in butter for about 30 sec. Add chicken and water and bring to a boil. Stir in rice and remove from heat. Cover and let stand 5 min. Stir in remaining ingredients and serve warm or cold.

Microwave: Place garlic and butter in a microwave safe dish. Microwave on high 1 min. Stir in chicken, water and rice. Microwave 5 min more. Let stand 3 min and then stir in remaining ingredients. Serve warm or cold.
