Cookies -
1 cup soft butter
1/3 cup whipping cream
2 cups flour
granulated sugar


Creamy filling –

½ cup softened butter (1 stick)
1 ½ cups powdered sugar
2 tsp. vanilla
Enough milk to make filling spreadable

Directions:
Directions:
1. Using an electric mixer, cream together the butter, whipping cream, and flour. Add several drops of food coloring if you want.
2. Gather dough together into a ball. Wrap in saran wrap and chill.
3. Roll out a piece of the chilled dough, about 1/8 inch thick on a flour-covered pastry cloth; use a cookie cutter to cut into small circles. (keep remaining dough refrigerated until ready to roll out---you can incorporate the scraps left over from the first rolling into the next piece of dough you roll out.)
4. Transfer rounds with a spatula to a piece of waxed paper (or a plate) that is heavily covered with granulated sugar; turn each round so that both sides are coated with sugar.
5. Place on baking sheet lined with parchment paper.
6. Prick rounds with fork about 4 times.
7. Bake 6-8 minutes or just until set and the bottoms of the cookies are a light golden color (NOT brown.)
8. Cool cookies
9. Put 2 cookies together with creamy filling in the middle, to make a sandwich.


For Filling:
Cream together butter, powdered sugar, and vanilla, adding milk as needed, along with a few drops of food color
