1 lge beef round steak boneless about 3/4 inch thick (3 pounds)-butterflied
1 tsp salt
1/2 tsp pepper

1/2 c vegetable oil
1/2 c red wine vinegar
2 tbsp. snipped fresh parsley
2 bay leaves broken into pieces
3 cloves garlic minced
1 tsp red pepper flakes
1/4 tsp dried oregano leaves

1 large onion
3 small carrots julienne strips about 2 inches long
4 slices uncooked bacon diced
10 pimento stuffed olives chopped
3 hard boiled eggs, peeled and cut into 6ths
2 tbsp. snipped fresh parsley
1/2 tsp dried oregano leaves
1/2 tsp salt
1/8 tsp pepper

2 c hot water

Open meat to lie flat, trim fat and pound with mallet until meat is about 1/4 inch thick
Sprinkle with salt and pepper

Place meat in a large glass baking dish, sprinkle with oil, vinegar, parsley, bay leaves, pepper flakes and1/4 tsp oregano
Refrigerate covered over night

Remove meat from marinade, remove bay leaves. Lay meat out on a board. distribute minced onions evenly over meat. Arrange carrots, bacon, olives and eggs over the onion. Sprinkle with 2 tbsp. parsley, 1/2 tsp oregano, salt and pepper

Heat oven to 350`

Roll up meat from long side and secure with skewers. tie with string at 1/2 inch intervals. Place meat in 13 x 9 baking pan. Pour hot water into pan. Cover securely with aluminum foil and bake until tender (1 hour)

Remove meat from pan and place on cutting board
Cool to room temperature-then wrap in foil and refrigerate

Cut meat into 1/2 inch slices and arrange on a platter
