Grandma's Italian Hard Rolls Recipe

6 3/4 - 8 1/4 c flour
1 1/2 Tbs Sugar (1 Tbs + 1 1/2 tsp)
1 1/2 Tbs Salt (1 Tbs + 1 1/2 tsp)
3 pkg quick rise yeast
1 1/2 Tbs softened butter (1 Tbs + 1 1/2 tsp)
3 1/2 c very warm water
corn meal
vegetable oil

Directions:

In a large bowl, thoroughly mix 2 1/2 cups flour, sugar, salt, yeast and butter.

Gradually add water to dry ingredients and beat 2 minutes at medium speed.

Add 1 cup additional flour and beat 2 minutes at high speed. Stir in enough of the remaining flour to make stiff dough.

Turn out onto floured board and kneed until smooth and elastic - about 8 minutes.

Cover with plastic wrap and towel and let rest 20 minutes.

Divide dough into 12-14 equal pieces. Roll each piece into an oblong. Beginning at wide side, roll up tightly and pinch seam to seal.

Place on greased baking sheet that's been sprinkled with corn meal. Brush tops with oil. Cover loosely (they will rise) with plastic wrap and refrigerate 2-24 hours.

When ready to bake, remove from frig and uncover carefully. Let stand at room temp for 10 minutes. Make 3-4 diagonal cuts on top of each with sharp knife.

Bake at 425º for 15-20 minutes until golden.
