8 eggs slightly beaten
1 tsp salt
1 tsp baking soda
1 1/2 c broccoli or cauliflower flowerets blanched and drained
1 c diced cooked chicken or ham
2 tbsp. butter

Directions:
Directions:
This dish is best made in a non-stick skillet or well seasoned 10" 925 cm) pan. Beat eggs in large bowl, add salt and baking soda. Mix thoroughly, add broccoli and chicken and mix again. Heat butter in skillet over low flame. When hot pour in egg mixture and cover and cook 25 min or until brown on the bottom. Turn it over. This is easier if you place a plate over the pan and flip the pan over. You then slide the egg cake back into the skillet to complete the cooking. This takes about 5 min or until brown spots appear. Slide onto plate and serve hot, warm or cold. Cut into wedges.
