2 cans (16 oz.) unsalted, stewed tomatoes, undrained
1 medium onion, peeled and chopped
1 small green pepper, seeded and chopped
1 small cucumber, peeled and chopped
2 cloves garlic, chopped
1/2 tsp. onion powder
1/4 tsp. hot pepper sauce
1/4 tsp. freshly ground pepper
1 cup chopped chives or green onions
2 lemons, quartered

Directions:
In blender, pour entire contents of 1 can of tomatoes and only juice from second can. Dice tomatoes from second can and set aside.
Add onion, bell pepper, cucumber, garlic, onion powder, hot pepper sauce and black pepper; blend until pureed. Pour mixture in large bowl, add diced tomatoes and mix well. Chill.
To serve, divide among bowls and garnish each serving with 2 tablespoons chives and a lemon wedge.
