1 - 2 cans hearts of palm, drained
1 tomato, chopped
1 shallot, chopped
Mushrooms, sliced
Parsley, chopped
2 tbsp red wine vinegar
1 tbsp olive oil
Salt and pepper

Directions:
Directions:
Slice hearts of palm in bite size pieces. Set aside.
Combine remaining ingredients except salt and pepper. Mix well, season with salt and pepper. Spoon mixture over hearts of palm.
