1 1/2 lb ground veal
1 egg
1/2 c fresh breadcrumbs
1 tsp salt
1/4 tsp freshly ground black pepper
1/2 tsp dried tarragon
1/2 tsp grated lemon peel
6 tbsp. butter divided
1 onion chopped
1/2 lb mushrooms sliced
1/3 c all purpose flour
1 c chicken stock
1 tbsp. lemon juice
2 c milk
1/2 tsp salt or more to taste
1/4 tsp freshly ground black pepper
1 tsp dried tarragon
1/4 tsp tabasco sauce
1 tsp Worcestershire sauce
3 tbsp. chopped fresh parsley
Directions:
Directions:
Combine veal with egg, breadcrumbs, salt, pepper, tarragon and lemon peel. Shape into 4 patties approximately 1/2" thick. Heat 3 tbsp. of the butter in a large skillet. Brown veal patties on each side. Remove from pan and reserve. Discard excess fat in pan. Return pan to heat. Heat remaining butter in pan. Add onions and mushrooms. Cook a few min. Sprinkle with flour. Cook 5 min scraping bottom of pan if necessary. Cool slightly. Whisk in stock, lemon juice, milk, salt, pepper, tarragon, tabasco and Worcestershire sauce. Bring to a boil. Reduce heat and add the veal burgers. Simmer gently covered 15 min. Taste sauce and add seasoning if necessary. Serve sprinkled with parsley
