1 1/2 lb lean ground beef
1/2 c fine cracker crumbs
1/2 c chopped onion
1/4 c chopped fresh parsley
1 egg slightly beaten
1/4 tsp pepper
seasoned salt
2 (7 1/2 oz) cans Hunt's tomato Sauce with Mushrooms
1 tbsp. salad oil
6 to 8 small carrots pared and cut in 2 to 3 inch lengths
6 to 8 small new potatoes pared
1/2 lb fresh green beans ends and strings removed or use 1 pkg (10 oz) frozen green beans

Combine ground beef, cracker crumbs, onion, parsley, egg, pepper, 1 tsp seasoned salt and 1/2 can Hunt's sauce. Mix well and shape into loaf about 6" long. Heat salad oil in large heavy skillet or Dutch oven. Place meatloaf in skillet and cover tightly and cook over low heat 20 min. Spoon off fat. Arrange vegetables around meat and sprinkle with seasoned salt and pour remaining 1 1/2 can's Hunt's sauce over. Cover and simmer 45 minutes or until vegetables are done. Arrange meat and vegetables on heated platter. If necessary skim fat from sauce. Thicken sauce if desired.
