3 tbsp butter
1 ½ cup onions, finely chopped
1 celery stalk, chopped
6-8 medium carrots, cut in ¼ in rounds
3 medium potatoies, peeled and diced
2 cups chicken broth
2-3 cans cream of something soup, suggest chicken, mushroom or celery... or 1 of each
2 cans water (substitute 1 can of milk for a thicker, richer soup)
Salt and pepper to taste

Melt butter in pan. Add onion and celery. Saute until onion is translucent. Add carrots, potatoes and broth, soups and water. Cook over low heat for 25 minutes.
While soup is cooking prepare Knephla
1 ½ cup flour
1 egg beaten
5-6 tablespoons water or milk
½ tsp salt
Combine ingredients to form a stiff dough. Roll into a ½ inch rope, cut into ¼ inch pieces. (Or, you can flatten into a rectangle on a floured surface- I use a rolling pin, and cut into ½ small cubes- I use my pizza cutter.) Drop into salted boiling water. Simmer 7-10 minutes (or until knephla are floating). Drain and add to soup.
