1 lb. boneless pork cut into strips
1/4 c. olive oil
1/4 c. lime juice and grated rind of lime
1 Tblsp. chopped garlic
2 tsp. oregano
1 tsp. cumin
1/4 tsp. chili powder
1/2 tsp. pepper
1 large green pepper, 1 large red pepper, 1 large Spanish onion,
all cut in julienne strips
Warm tortillas (wrap in foil and warm in oven)

Set up individual bowls of Shredded cheese, shredded lettuce, sour cream, guacamole, tomato salsa and chopped green onions for people to add what they prefer.

Combine pork with oil, lime juice and rind, garlic & spices...marinate for 1 hour in fridge.
Stir pork with marinade in work or frypan for about 2 mins.
Add vegetables; cook until vegetables are just tender. Transfer mixture to heated platter to serve with warm tortillas, and the selection of toppings.
