2 heads of Celery - tops and bottoms
3 Zucchini - chopped
4 - 8 cups potato skins
carrot tops from a bunch of carrots
beet tops from a bunch of beets
water to fill a stock pot

Directions:
Directions:
Clean all vegetables and put in a large stock pot. Fill with water and bring to a boil. Simmer for 30 - 45 minutes. Strain pot. Put stock in containers. After they cool down, they freeze very well for future use.
