1 tbsp olive oil
1 diced onion
1 tsp cumin seeds
1 tbsp minced ginger
2 minced garlic cloves
1/4 tsp cayenne
1/4 tsp ground cloves
salt
5 cups vegetable broth
3/4 cups dried red lentils
1 tsp thyme
29 oz can fire-roasted tomatoes
2 chopped carrots
3/4 cup quinoa (cooked)
juice of 1/2 lemon
optional 3/4 cup cashews
Garnish: parsley

Directions:
Directions:
Heat oil in large saucepan over medium heat. Add diced onion; cook 4 minutes.
Add cumin seeds, minced ginger, garlic, cayenne, cloves and salt - heat one minute.
Add 5 cups broth, 3/4 dried red lentils, 1 tsp thyme, tomatoes and carrots. Simmer 20 minutes. Stir in 3/4 cup quinoa, cashews if desired, and lemon juice. Heat 5 minutes. Garnish with parsley.
