1/3 cup raisins
1 thick slice bread
3 tbsp. olive oil
1/3 cup pine nuts
1 1/4 lb spinach, stalks removed
2 garlic cloves
salt and fresh pepper to taste

Directions:
Directions:
1. Put raisins in small bowl with boiling water and soak 10 minutes. Drain.
2. Cut bread into cubes and discard crusts. Heat 2 tbsp. of oil and fry bread until golden.
3. Heat remaining oil in pan. Fry pine nuts until beginning to colour. Add the spinach and cook quickly, turning the spinach until it has just wilted.
4. Toss in the raisins and season with salt and pepper. Transfer to a dish and scatter croutons. Serve hot.
