8 large potatoes, or small bag of small ones
1/2 cup olive oil
⅓ cup lemon juice
2 tsp. or more of dried oregano
1/8 tsp. or more of ground black pepper
4 garlic cloves finely minced
5-6 stamens of saffron
2/3 cup vegetable broth

Directions:
Directions:
Peel and quarter potatoes and place in shallow roasting pan.
Pour oil over them.
Add garlic, oregano, saffron, salt and pepper and toss well to coat the oil.
Bake potatoes for 15 minutes.
Add stock, toss and bake for 10 minutes more.
Add lemon juice, toss and bake for 10-15 minutes more or until potatoes are cooked through.
