1/2 cup butter
1/2 cup flour
6 cups milk (or more)
1/2 lb. Velveta cheese
1 cup shredded cheddar cheese
1 cup of any shredded cheese of your choice
6 cups of cooked macaroni
a handful of croutons (crushed)
1/4 cup bacon bits
2-3 drops of liquid smoke (Cabella's brand)

Directions:

Melt butter in large pot and add flour, mix well. Stir in milk and make a roux sauce a bit on the thin side. So you need to add milk accordingly. Then add in the cheeses and stir till they are all melted. add the liquid smoke and bring it all to a boil and remove from heat. Place macaroni in a large baking dish (9x13 or so) then pour the sauce over it.
Sprinkle with bacon bits and crumbled croutons.
Bake at 350ºF for 30 minutes.
I use left over pasta of any kind. This goes great with Catherine's meatloaf.
