1-lbs.Dried Red Kidney Beans 4-Quarts water 3/4 Cups Chopped onion 3/4 cups chopped celery 3/4 Cups Chopped Green pepper 2 teaspoons minced garlic 1/2 cup butter 2 bay leaves 2 teaspoons salt 2 teaspoons Hungarian paprika 1 teaspoons dried whole thyme 1/2 teaspoons ground red pepper 1/2 teaspoons dried whole oregano 1-lbs.andouille sausage or smoked sausage,,cut into 1-inch pieces 1/2 cups finely chopped fresh parsley oven rice:11/2 cups uncooked regular rice 21/2 cups chicken broth 11/2 tablespoons finely chopped celery 11/2 tablespoons finely chopped onion 11/2 tablespoons finely chopp green pepper 11/2 tablespoons butter 1/2 teaspoons salt 1/8 teaspoons garlic powder dash of red pepper pinch of white pepper

Sort and wash beans:place in a 6-quart Dutch Oven.Cover with 2-inches above beans:let soak overnight.Drain beans.Add 4-quarts water:bring to a boil.Reduce heat to medium;cook uncovered,11/2 hours,strring beans occasionally.Saute onion,celery,green pepper,and garlic in butter in a large skillet until tender.Stir sauteed vegetables and next 6 ingredients into beans:cook,uncovered,1 hour,stirring occasionally and adding water if necessary.Bake sausage at 350*F.for 20 minutes:drain well.Stir sausage into bean mixture.Cook,uncovered,minutes,stirring occasionally.Remove bay leaves.Stir in chopped parsley.Serve over oven rice.Combine all ingredients in a 2-quart baking dish dish;stirring we well.Cover bake at 350*f.for 1 hour or until liq is absorbed
