Ingredients: 5 pounds sweet potatoes ½ cup butter or margarine ¼ cup sugar ½ cup (or more) tequila ¼ cup lime juice salt and pepper lime wedges

Directions:1. Rinse and peel sweet potatoes. Shred with a coarse blade in a flood processor or grate by hand. 2. In a 2-inch deep 12 x 17 inch baking pan, melt butter in the oven. Add potatoes and sugar and mix well with a wide spatula. Bake, turning sweet potatoes occasionally with the spatula, taking care not to smash the potatoes. Bake at 400º for about 50 minutes until potatoes are soft and browned on top. Stir in tequila and lime juice and bake 5 more minutes. 3. Remove from oven and put into a bowl. Season with salt and pepper. Serve with lime wedges to squeeze over potatoes. |

Notes: The key to this dish is to not cook the potatoes so long that they mush together. Cook so that the grated potatoes still have the texture of being grated rather than mashed. Another good tip is to mix some lime juice and tequila and serve it on the side. It is like pouring a Margarita over your potatoes! After I got the original recipe from a 1998 Sunset Magazine, I quickly abandoned the Southern method of cooking sweet potatoes with milk. Why use milk when you can use tequila?
