1 lb fresh mushrooms

Directions:

Prepare mushrooms. Wash quickly under cold running water. Do not peel. Chop, slice, quarter or leave whole depending upon how you will use them (gravies, sauces, casseroles, etc). Bring 1 qt of water to a full boil. Add 2 tbsp. of lemon juice or vinegar. Keep heat on high flame throughout. Add prepared mushrooms. Allow water to return to full boil. Remove mushrooms immediately and immerse in ice water to cool. Drain thoroughly. Pack in freezer bags. Freeze quickly in "cold" section of freezer. (For loose pack, freeze on tray lined with waxpaper until solid to touch. Pack quickly in freezer bags.) Use frozen mushrooms within 12 months. (Keep at -18ºC or colder.) Do not thaw mushrooms before cooking.
