4 to 5lb Boston Butt
2 small to medium onions (small diced)
Enough water to come 1/3 the way up the roast in a deep pot or pressure cooker
1tbsp season salt
1tsp garlic powder
Salt & pepper
2tbsp regular yellow mustard
1/2 cup apple cider vinegar
*mustard & vinegar may need to be adjusted to taste

In pot with roast, add onions, salt, pepper, season salt, and garlic powder. Cook covered until meat is "fall apart tender." Take the roast out of the pot and reserve the liquid. Allow meat to cool until you can handle it. Then tear it up with your fingers until finely shredded. Return meat to pot of stock. In a separate small bowl, combine mustard & vinegar and add to the pot. You may need to adjust the mustard and vinegar mixture after tasting but they must be mixed together and added to meat at the same time. Simmer for 15 to 20 minutes. Serve over buttered rice.
